int usually benefits from a wide arrange of shit while str and ex just make you hit harder. there are of course exceptions of course like in a couple of megaten games, physical skills dominate magical skills.
melee characters are usually the default easy mode characters so they have average effectiveness, magic characters usually have more advanced mechanics to take advantage of.
Gwyn is easy as shit no matter what. STR and DEX both dominate in PvE and PvP making it superior to INT

I think the idea is that mages are weak early and mid game and strong late game, while warriors are balanced for each stage and knights would be strongest early etc

The problem with this is unless the gameplay is designed in such a way to make physical combat interesting over a long period, pure melee characters become boring in 30 minutes whereas INT mages generally have more flexibility and can do not only direct damage but utility and other misc actions thus being more interesting.

Str makes you more capable of taking abuse while Dex is usually status effect related. Int makes you able to hit multiple enemies at once or buff others.

A properly made Str/dex character can slaughter enemies by the hundreds. 10 party skill in everything is enough anyway, 14 party skill is good but not the only way to play.
