Considering that he can pull off a dive-roll pretty well, he'd be unstoppable.
I'd say he'd do a pretty decent job. He has the signs that could make the game EZ mode for him, slowing enemies down, so he can unload on them. If you could half the speed of all the bosses, the game would be piss EZ.
Remember, the MC of Dark souls isn't strong, he just can't stay dead. I feel geralt has the actual skill to make it to all the bonfires in one piece, and using a sign on a boss would ensure victory.
Also, he has a medallion which would sense any of that stupid artificial difficulty enemies hiding around corners and laying in wait with traps.

He'll trash most common mobs and can handle most bosses, considering the ashen one/chosen undead doesn't really do anything a normal person can't do

The Dark Souls universe can be beaten by a naked person wielding a ladle, Geralt will be fine
They can block ridiculous attacks from things the size of an elephant and swing weapons that are 5 times their body weight. Pretty sure the whole not dying thing is only one of the supernatural things Souls protags can do.
With alchemy hed stomp every boss without effort.
I played a 'Geralt' character build in Dark Souls 3.
2h the straight sword of your choice, buy lots of throwing knives, utilize a lot of pyromancy to replicate the signs, pick a light armor that vaguely looks like something Geralt would wear, and you're set. Pretty much do this in all the games, hell even Bloodborne to some degree.
It's a viable build, and the actual Geralt's job is dealing with Dark Souls creatures and scenarios, he'd do just fine.

Also, forgot to mention, the actual Geralt would also have tools Dark Souls characters would never have access to, like his potions, traps, etc.
He also has better bombs, self heals over time, and is genre savvy enough to see right through people like Patches in an instant.

You forgot that undeads kind of can't die.
Geralt has 1 life so one error and it's over.
Geralt goes hollow in an hour and serves as a few souls for a low leveled player character early in the game
He'll die to Anor Londo archers or O&S

His pirouettes are essentially faster rolls that can end with a devastating sword strike, so he'll do good against most enemies.

I believe garalt would do well against common enemies and smaller bosses but he would get fucked by anything as big as the gaping dragon for example. Also smough and ornstein would probably fuck him up too.

Since he isnt undead he cannot use bonfires, so he would have to bring a lot of potions.
He's killed shit as big as the gaping dragon before though.

I'd go for Geralt since Ciri managed him, and was less good at swordsmanship compared to geralt (a few years of training at most vs about a hundred years on the path). She did got lucky to fight Bonhart on the perfect conditions for his demise, though.

Well, he would be a hollow, as that is how humans are in that world. With his skills, he would probably be able to gain good weapons and armor. Then he could gather more souls. But, he would lose his souls. All of them. Over and over again.
Unless Geralt was a significant lore character in the series, he would simply be another hollow. Just a little more peculiar one. A lot stronger than the average.
A more interesting question is how Geralt would fare in Bloodborne. As the Witcher series and Bloodborne have a lot more common ground. Monsters from foreign dimensions and all.

Geralt is a literal superhuman with both better equipment and more skill at fighting at the beginning than any single souls protagonist, while also casting mind control spells and potentially fighting enemies in slow motion with Yrden.
And since he can actually climb, he might not even need to fight any of the bosses to finish the game.
How about armless one punch man vs goku
He will be fucked. The reason he is so strong in the witcher universe is because he and all the other witchers have studied the monsters of the world for +20 years. Geralt would do fine against hollow dudes but when he meets a monster? No oils or potions will work, he wont know which bomb to use nor how to fight it.
