KH1's cramped levels and poor conveyance make its design more often burden than benefit.
It is without a doubt a rough game in all aspects, and as much as I love KH, it's hard to really enjoy KH1 as much as I used to.
IIFM is the objective best in the series as all elements of the game work together to create a tight, unified experience. Nothing is out of place and shortcomings in one area are often in service to the successes of another.

You can always just play the vanilla version of 1. FM didn't actually add much, its most notable additions are rewards for beating the superbosses but the game is pretty much over by that point so you don't do much with them.

This guys goes into good detail about it, but, he's not the only one. It's frustrating since it makes it difficult to want to play this.
I might have to do that, I just don't know what the big differences between the two are. I've only played 1&2 vanilla, but, I want to get the best experiences when I replay them. Just really frustrated since all I wanna is play them without having to resort to a garbage port.

The PS3/PS4 version is the best way to play KH1. You get all the FM content, a couple new abilities on top of that, and the ability to skip cutscenes. Also better visuals and such.
For KH2, it's a bit trickier. The visuals and music are fantastic in the HD ports, probably the best HD remaster I've ever seen in that regard, but the gameplay is better on the original PS2 FM version. The PS3 version suffers from some insane loading times (that actually impact the gameplay mid-combat, if you try to use a Drive form), and the PS4 version has some weird physics issues because of the framerate and the save crashing bug. There was a patch to fix some of that but it's still present to an extant. Both versions also suffer from fucked up sound effects and Xemnas's RC not working right. If you're gonna do shit like the level 1 run, I recommend you do it on the PS2 version, for playing more casually, the HD ports are fine.
Abhorrent pacing. I mean the worst narrative pacing I've ever seen in my life.
The supporting cast may as well not exist for all they serve the story.
Characters are flat, creating a character-driven narrative where the characters are driven by the narrative. It's very messy. You can tell the preceding canon of KHII was fucking up the melodrama they wanted to tell.
Xion as a character is... bad. In a broad sense, she retreads the storyline of Riku-Replica from CoM, so she can't offer any thematic additions or explore any new ideas. She's a Frankenstein's monster of other characters' traits and concepts (Riku-Replica, Sora, Kairi, Roxas, Naminé), making her feel completely forced and unlike any other character in the franchise. Stamping onto that "the secret 14th member of Organization XIII" was just... why? Why do this?
The ending renders the entire narrative pointless, so for a game that marketed itself as answering all your burning questions and revealing the secrets of the Organization, it really fucked it up by focusing the entire narrative around a character who would disappear without a trace and, in effect, never have existed to begin with.
Combat is a lot more than how much fun you have smacking things with a metal pole.
KH1's combat design is, in a word, clumsy.
You have Sora, who himself handles clumsily (I have no problem with this per se) constantly put up against enemies in numbers Sora can't handle, with capabilities Sora can't reasonably counter.
A GREAT example of this is the Cave of Wonders fight. You have to climb on this dancing lion head (fucking annoying already), while it shoots homing lasers and summons Heartless.
The Bandits can and WILL fly into you from across the map, and you're just stuck up here smacking this eye without a way to properly defend yourself.
If you want to keep enjoying KH1, don't play it on LV1.

KH1 was never designed for Level 1. The guys doing the HD port just tacked it on because it had become a series staple, but it's obvious that the game wasn't built with it in mind. The game's meant to be played like a traditional RPG, where you level up to gain new abilities and have some room to soak up damage and cure through it. That's not a problem, exactly, though it does make it weaker as an action game compared to 2, but it really doesn't gel with the idea of a level 1 challenge. FFS, you don't even get Scan on a level 1 run in KH1.
And coincidentally, the Cave of Wonders fight is where I quit the level 1 run of that game. I've beaten all the Data Org fights plus Terra's LW on Level 1 Crit mode, but that fucking tiger head is impenetrable.

That's the thing, I already have, and despite how shit some of the fights were (air soldiers can go fuck themselves), it made me apreciate the basic gameplay a lot more, because of all the different tools and strategies you can use in fights.
I honestly think KHFM (outside of LV1) is way better than DDD and re:COM which are both unbalanced and overcentralized around specific tactics and have absolutely zero flow to their combat.

KH1 at least has depth to it. It rewards you for good timing and skillful execution, weapon clashing/parrying has a lot of applications, there's a wide range of useful abilities, enemy and boss designs are pretty well done (for the most part), etc. I'll take that over "mash square and then use an OP command" any day.

They also added Gummi Ship missions and new synthesis materials that make making Ultima weapon more difficult in the FM version of KH1

re:CoM I'd say is about on par with the original. They added a few things that are kind of nice, and none of the other things they added are what I would consider really bad.
On the other hand, they retranslated the dialogue, and it is SO GODDAMN BAD compared to the original's.
Balloon, hands down. Reflect requires timing and is tied to your ground combo, so you can't just spam it. Balloon is just "Press X to Break the Game."

Reflect is high AoE damage, with a condition that puts you in danger if you screw it up and an MP cost to limit it. Balloon is just high AoE damage with a negligible cooldown.

Aero is one of the most useful skills in the game. There's a lot in KH1 that can be tough to see coming, so Aero can give you a buffer so that you don't die. The upgraded versions can even outright block some attacks.
What's a good level to take on Phantom? He kicked my ass like crazy when I was a kid
40-45 should be more than enough, once you know you to fight it you should be able to basicly take no damage, it's more of a gimmick fight
Were there any bosses in BBS or DDD that talked? All I remember fighting were Unversed and Dream Eaters.

After Hollow Bastion should be fine. He's a pretty easy, monotonous boss, as long as you know how to fight him.
You need to have Peter and Goofy take off all of their abilities (except MP Gift), load them up with Ethers, and go at it. Just make sure to cast Stop on the clock tower regularly to prevent Doom from going through and have the basic three elemental spells in your shortcuts. You can also hide behind the tower to avoid the ball he'll shoot at you once you hit him three times.
That's not fair, Xemnas could read a phone book and it would sound like pure sex
