Even if putting his head on a pike would've been a bit extreme, at that point Akechi was both unstable and extremely dangerous. Surely neutralizing the threat he posed to himself and those around him takes priority. I at least would've liked ONE party member to have been furious with him instead of just seeing him as a victim.

Honestly I would've been fine with that. It might've been really interesting to see what kind of palace he had or how a redemption arc would've been handled. However, they were locked in mortal combat at the time and just started chatting it up with him like he couldn't have done something unpredictable like pulling a grenade out of his pocket. Bad things happen when people stop taking danger seriously like that.
