Dwarf Fortress is the simaltionist's dream. It hasn't been surpassed in terms of all the details and subsystems implemented.
However, it has dogshit UI (contrary to the popular belief, the ASCII or tilesets are not the problem, the UI is the key deterrent of newcomers). In this case, Rimworld is pretty great. It is obviously much shallower than DF, but it still can be a lot of fun.
I can tell Dwarf Fortress is incredibly deep in terms of its capabilities and possibilities, but since I'm too dumb to keep my Rimworld fortress running I naturally have difficulty even thinking what to do in DF.
You can abstract urself perfectly with shit grafiks. Think of it as a board game.

They're both good games but I prefer dwarf fortress since it allows me to go in a wold wide slaughter.

Rimworld makes for a much better actual game. Dwarf Fortress has insane systems and potential but a lot more time spent doing menial shit waiting for things to happen.

Df is fun, but it's entirely up to chance if cool shit happens, and it's usually rare and far between. Rimworld fixed that with the ai story stuff

Because of this new generation of balance faggotry in game design we get bland Skyrim instead of Morrowind with its spellmaking, and will never get another Arcanum or Fallout.

The UI is fine except maybe for the military screen, which just has lots of submenus. Try learning the hotkeys. I agree it deters a lot of Cowodooty types but that's mostly because they're bads used to slow-as-shit mouse-navigated menus instead.
It takes an hour tops to memorize the basic hotkeys and they're intuitive anyway ([b]uild > [b]ed to build a bed etc). Dfhack plugins improve on this by adding search functions to menus that used to just require lots of micro, like the trade screen.
DF has far more content but you seriously have to downgrade it for its UI. People who say 'git gud' or something along those lines when talking about a UI that limited, backward and lazy are basically taking pride in having wasted countless hours of their lives purely because every action takes so many extra button presses than a game with a proper UI would require.
I prefer Rimworld because of the research tree, makes it look like your colony is actually progressing technologically.
DF gets kinda stale after you get to a point.
Setting up a military isn't that bad but I'll admit the menu isn't intuitive and requires reading the fuckin wiki (which new players are really bad at)

Wtf, user? I keep shilling DF for years, from Sup Forums and reddit to local forums and game shops where I play tabletop. UI is definitely the key obstacle, I've literally watched people of various interests and capabilities playing DF and struggling with all that mess is an objectively sound reason.

Again, very narrow-minded of you, user. People who play tabletop with me prefer GURPS and some of them work in my field quantum field theory, enjoy complex games and skip all the AAA console bullshit. They still get discouraged when presented with all that mess that is DF UI.
I always see anons such as yourself claiming the good old 'git gud', but this is the classic blind fanboyism. I have been modding the game and contributing to the wiki and helping anons everywhere for years, one would think I'd be the first to defend the game.

I'm agreeing with you that yes, the UI and graphics are the major hurdle to people getting into DF but neither are anywhere near as bad as people make out. I mean the game itself isn't even hard, yet people make this big deal out of "ermagerd DF so hard". SS13's the same, every person I've shown that has just bitched about the controls and "how good this game would be if it was 3d".
I wish I could show those people Aurora 4x; an actual hard game with a shit UI and "no gfx".

Here's an example: Goldbox Games. Shit UI. 100%. Pure shit. Does it work? Yes. Can you memorise it? Yes. Does it prevent you from enjoying the game? Not really (maybe just a bit), but can be a huge deterrent for "considering-it"-players.
