Very simple. Think about all the elements you like in vidya or entertainment in general and make a list out of them. That way it's much easier to enjoy a game with some of the elements you like. For me:
- Psychopathic or sociopathic characters
- General themes of insanity
- Lovecraftian themes
- Victorian themes
- Boss progression with fleshed out bosses (like metal gear solid 3)
- Some sort of ranking up, military style
And so on
The only thing left to do is to try and make your own game. Nothing makes you want to play games more than struggling to polish your horrible turd of garbage programming and art assets

I like playing the classics as much as the next guy, I play about a 50-50 split of retro and modern (modern being 360/ps3 to current gen)
I think it's just that more games now are really generic. We're blasted with the Assassin's Creeds, the Uncharteds, The Tomb Raiders, the Dork Souls. The Plethora of FPS.
They all just kind of bleed together and have no lasting impact.
Meanwhile, something like Mega Man X is still consistently fun, even though I've played it probably hundreds of times over 20 years. On the contrary, I can't stomach playing Uncharted ever again after the most recent playthrough because it's just fucking drivel.

I dont have this problem but I find it hard to sit down and play a console game. Typically I can play a mobage on my phone at work, or play a shitty pc game moba or MMO while watching a movie.
When it comes to a game I actually want to play I feel like I need a 3 day weekend to get my mind right and get IN THE ZONE. it's not satisfying to play for an hour a day so I don't play after work and school is done, I can and should in order to play the games i like. instead i chase after that summer time child hood idea of a summer dumping days into a game.
finding balance is hard I've easily put more hours this week into shit phone games and MOBA/MMO while watching tv, the arms what like 9 hours of demo play instead of Persona 5 or fire emblem fates which I want to play.
i did do a dry run of a level so I would be ready for fire emblem level when its really time to play
then again it don't matter none of this matters. OP anyone else if you read this sometimes you should take a break from videogames until the you get the itch. you know the one, it makes you want to just fuck around, grind, get some crazy chievo, or just wanna press buttons on a thing.

I think this is a good approach. If you play something you enjoyed before again it's the same as reading an old book.
What's rare is finding a new game that is genuinely engaging enough that you want to play to completion the issue I find there is that when the game is done its less of a satisfying completion and more of a melancholy goodbye.
Newgame+ needs to be in more games.
