Depends on the game. First person is good for precise aiming, but third person allows you to view your surroundings better, which, generally speaking, is more broadly useful. Immersion is only relevant in something like a VR game, or MAYBE a horror game, but aside from that, your level of immersion isn't important in the slightest.

Gameplay often suffers from first person, because it has to compensate for the many drawbacks compared to third person.

It makes it harder to see your surroundings and your characters positioning, it also makes it a lot harder to understand how more complex character movements and actions interact with the environment and enemies making almost all action oriented genres impossible to play on a higher level without changing the foundation of their gameplay.

Doesn't mean first person hasn't its advantages, many horror games actually gain a lot by how differently you have to play and explore the game.
