Gwyn from Dark Souls should be on there. Even if you think it's an easy fight (I don't but contrarians here always say it is) it's a very atmospheric fight and pretty memorable.

Krauser is one of RE4 worst bosses

I would say Orphan of Kos is a better souls fight.

And I would say Nameless King is the best Souls fight.

I'd second Ornstein and Smough. I remember seeing one and thinking "oh shit" and then the other jumped down with him and that made it much more intense. Very memorable, and challenging at first.

Absolutely glorious taste my man. That masterpiece of a boss doesn't get nearly as much appreciation as it deserves. It gave Pikmin 3 one of the most memorable endings in any game I've played.

Freeze subverts the Predator gameplay and forces you to utilize every tool at your disposal. Even though it's easy, it's done really well and is exactly how a boss is supposed to be. On top of that, the atmosphere of the fight is great, Freeze constantly tracking you makes you feel like you are being hunted down, and keeping track of what you have and haven't done to Freeze makes for some good gameplay.

Krauser sucks though, you are right.

Nothing about it was creative nor fun. The fact that they have to put in a boss where they have to remove the one trick pony card means mechanically the game has little to offer.
