I've disabled Windows Defender and given myself rights to everything, but I can't fix 2 of the 3 problems

Thought it was Microsoft and my HDD firmware not working, it has to be a hardware/software issue because reinstalling windows doesnt change it.
It's a known issue that Microsoft now considers "fixed" so you're basically fucked. Try wiping and installing fresh without 3rd party drivers and try to isolate to the one that creates the problem.

I fell for the meme, now I got this update that wants to install. I installed it once but it completely wrecked my shit. My audio got all fucked up, it lagged like fuck, so I rolled it back. Now every once in a while I get a nag wanting me to install it but I cancel it. If it werent for my games, and some other programs, id have switched to linux a long tine ago.

You do know that it will update eventually, right? It won't let you say no forever. There is a cutoff period where it will force the update. Hope you're prepared.

I've had it occur for almost two years intermittently. Its probably happened the entire time, but I recently started no-lifing a demanding game so the windows drive locking up causes the game to lag even though its running on the ssd.
Are you using spinning platters or a SSD?
It was installing Intel Rapid Storage drivers from the manufacturer's page that fixed it for me.
Go back to win7 or install Solus. These are your choices.

Designed from the ground up to work on desktops and be as simple as possible to use. Ideally the end user never touches the terminal unless they want to. It's also the only distribution that spent time making steam for Linux actually work.

From benchmarks, I've seen that Game Mode does gain a little performance. But what is happening is that previous version of Windows 10 has 100% performance, creators update lowers it to 90% performance and then game mode increases it to 99%.
