In TTYD there's an arc where Mario enters a fighting tournament that mimics professional wrestling. It's one of the best parts of the game.

Jade Empire has a fantastic tournament arc that involves a companion's backstory. And eventuates with said companion fighting his undead brother.
Some of the saints row games have a group of side-missions, where you just brawl against other people in a cage.
Saints Row 4 makes it less of a brawl, but you get to fight another guy with super powers.
Megaman Battle Network 4 has lots of issue with pacing, constant "over world" reuse instead of dungeons, and above all, you have to beat the game 3 times to get access to all the different souls aka playstyles.
1st time through the game you get 3 souls, then 2 on your second, then 1 at the end. What you get each time is random, and not all of them are useful.
Finally all the pain in the ass stuff you do to unlock stuff gets reset when you start the game over, and harder more annoying enemies remain in the over world. I hope you didn't grind a lot of money to pay off some people to get a key to go to this place where you have to have a rare battle chip. And I hope you didn't like a specific area with easy enemies, because now they are harder and much more tedious
Also, MMBN4 has the worst implementation of Dark chips. Just avoid it.
It's a chapter in the game with probably one of its more memorable characters. Personally, I found it to be a tedious part of the game but I'm weird apparently because that chapter is actually very popular among fans.
You have to play the game three times too unlock everything. Dark Chips were pretty cool, though.
Xenogears had a part where your guy enters a tournament while your B-team does an infiltration job. And the infiltration gets harder if your kung fu master main character no-sales all the chump competitors.
It's a chapter that's more memorable on your first playthrough

One thing about licensed-based games based off anime is that they usually got the visuals rights, regardless of the gameplay. I loved the look of the Super Butoden games and Hyper Dimension.

The first Golden Sun. Instead of immediately fighting, you lose your current equipment, and have to race your opponent in an obstacle course to get better equipment at the end. The rest of the party helps by being able to discreetly move some of the obstacles around with psychic powers to make things easier.

Kurama is bro tier but he's not afraid to do horribly cruel things if he has to. Since Elder Toguro couldn't die or whatever, entrapping him forever was about the only thing he could do to stop him for good.
The stuff Kurama can do with his plants seems kind of asspulled at times, but at the same time it winds up being so amusing that I don't mind.
Contrast DBZ Super's tournaments with the tournaments in the original Dragon Ball. Those were amazing, and every fight was meaningful and hyped to hell and back. I think you can break a good tournament arc down into a few distinct must-haves:

Stuff has to be going on outside the arena. Why are the competitors there? Why are the spectators there? What is everyone doing during their down time? Are the competitors training or relaxing? Answering those questions answer the question that really makes the reader/player interested: Why do I care who wins?

Everyone that's ever done a randomized bracket in something like the DBZ fighting games knows that sometimes you'll end up with Master Roshi fighting Omega Shenron. It gets old and boring to watch the handful of people clean house five matches in a row just to fight each other. That's why a good tournament has competitors that, either through sheer power or counter-strategies, can stand up to the characters that are more central to the narrative. You might be there to watch Goku fight Jackie Chun, but you're still going to remember the fight against Nam when it's all over.

Tournaments are about hype if nothing else. Everyone is there to see who gets to be champ, and everyone knows the hero will get a shot and the villain/rival is going to stand in their way. All the other matches, and all the other events outside the arena are meant to build up to that one fight. This final battle is where the tournament narrative and battle techniques should blow their loads. Master Roshi blowing up the moon, Piccolo blowing up the arena, Yusuke and Toguro destroying almost everything around them, etc.

Yeah, but it's only one match. It's called Trial Road. Instead of gaining equipment, you're supposed to give some up in a chest. The slower person has to fill two chests. It also falls kind of flat because you don't hear anything about it until the guy says, "Hey, you have to fight me at the top of this obstacle course now."
In the first game, you spend an entire arc making your way to Tolbi by boat, hearing everyone in Kalay and on the trip excited about Colosso. When you arrive in Tolbi, the city is jam-packed with tourists there for the spectacle, to the point that the party has to use a spare room in the castle instead of a regular inn because everywhere else is full. By the time the player finds out they'll be competing, you know full well what Colosso is and the stakes it entails.
