I honestly don't understand the obsession with animal buddies. I personally never enjoyed them in the DKC games outside of just being an extra hit.

collect every KONG in each level
then do it again in Hard Mode to unlock Mirror mode
Get all the KONG letters in the levels and beat the temples they unlock. This will unlock World 7 which once you beat that will unlock Hard Mode.
Hard Mode is 1 heart, no check points, no kong barrels in all the levels, but you get to choose to play as any of the four characters. Yes its not the ideal way to play as the other characters but it does exist, and getting 200% in this game is hours of fun if you are into that sort of level mastery.

Level design that is easy to predict with no creativity in mechanics and is built around collecting trinkets.
The DKC games were always lackluster compared to better platformers like Mario, and they completely relied on their visual presentation. Yoshi's Island was the same way: unsatisfying game mechanics bolted on to an artstyle and focus on collectibles. 2D platformers dropped off a cliff in terms of quality with the release of DKC and they haven't recovered since.

I regard DKC2 as the best platformer of all time. Super Mario World and the original DKC tie for 2nd. Something about the physics of the DKC games is so satisfying. When you master that rolling, multiple enemy bounce flow it is so satisfying

A subversion of everything you have learned from playing multiple Mario games is not a "gimmick." Hell, the entirety of SMB2J is a subversion of what you had leanred from SMB1, and it's brilliant.
Designing an entire game around gimmick levels like DKC isn't brilliant, it's laziness. There's no consistency in world design. Instead of exploring a world, you're engaged in multiple obstacle courses that have no rhyme or reason betwen them.
