That's because while MGRR is fun and very cinematic, gameplay wise it's actually pretty shallow. Not to mention that there is no seamless weapon switching and the movesets are very very repetitive, more repetitive than Nier Automata even.

For people who never actually played action games, MGR was probably the most outrageous, insane, fun game they ever played.
But compared to bigger games in Platinum portfolio it's a very tame, primitive, and cheaply made game.
Sure your enjoyment of playing your first competently made action game will never go away and will forever stay, but there are vastly better games made before and after.
You're right, the parry mechanic is what makes it unfun not the difficulty. Makes the combat spammy as fuck.
There isn't a single Platinum game that is more outlandish than MGR though

Higher dificulties doesn't make the base less simple, but makes keymashing completely unviable and the extra more agressive enemies do give a new twist worth replaying, allowing for the depth to come out a bit.

No it'll always be about getting close to enemies and then spamming attacks/parries but some tougher encounters do make you move around a bit at least since you'll get overwhelmed otherwise.
First levels of Bayonetta 2 and Wonderful 101 outdo MGR FINAL encounter like a sleepy baby it is.
