There's two kinds of people my friend. The pirate, and the faggot.
I've bought four Denuvo-protected games (MGSV, Lords of the Fallen, DOOM and Nier Automata) and I had no trouble running any of those four games compared to non-protected similar games. Even when my PC is a borderline toaster.
Extra Credits once did an analysis of why developers end up releasing demos. I don't recall their exact conclusions, but some points were:
If the demo is good, then that will incentivize players to buy the full game, but if the demo is bad then it will make players ignore the full game.
This incentivizes developers to put a lot of polish in the demo, which either takes resources away from the full game or adds on to the overall budget of development.
Even if a good demo is made, if it's made better than what the full game is or somehow doesn't represent the full product faithfully, this will leave a bad impression on the consumers in the form of false advertising (the demo promised us X, but we were given Y), which does damage in the long term for the developer and faith that consumers put in them.
On top of all that, data out there for games with demos seems to suggest that they don't have any impact on sales or piracy at all.
As a result of all of that, making a good quality demo eats up resources, damaging the main product if it's good, hurting long-term goodwill if it's not representative of the final product, or flatout causing a sales drop if the demo is bad, and with very little pay-off if they manage to pull it off right. In the end most developers realize that making a demo is not worth the time and effort.

but I don't do either of those, if a game I'm interested in is too expensive I wait for a sale to buy it and if I'm not sure if I like a game I just don't buy it or pirate it.

What I never understood about this is that it's easy as fucking shit to "make" a demo that's perfectly representative. You just make a version of the game that stops at X point "hey, gotta pay for full game if you want more!"
This isn't even remotely a radical fresh idea or anything. Fucking Doom and all sorts of other sharewares did it in the 90s. Have that in mind when you're designing it, and you won't kneecap yourself later with extra work.
