The story was really bad. Characters were one dimensional, the morals were poorly handled, the writing is filled with plot holes, there are tons of inconsistencies that are never explained and things that are conveniently forgotten or immediately forgiven, etc.

Sorry lads, the soundtrack wasn't my cup of tea. I get that effort was put into it, but it sounded more like a bandcamp album than a score made specifically for a game. Each track was unique, but didn't really fit the game all too well.
Not to mention the melodies were just all over the place. Very little consistency, which is the hallmark of a good soundtrack.

When did I say I like Undertale? I like some aspects of it, but it's not a very good game as well as a shitty story. I wouldn't really recommend it to anyone.
I'm not talking about the soundtrack, I'm talking about sound design. The entire crux of the game is on the sound design, every single aspect that people like about the game are often misattributed to something that isn't the sound design, but it always is.

Think about it, the Batter is the immune system, Hugo is the child, the whole game world is his body, you flip the switch shortly after killing Hugo because it's symbolic of the fact that you've entirely taken over his body and it's just about ready to shut down.

Just like Sup Forums was shilled to death with a thread for each overwatch character all the time.
I fell into the hype during the first months, but afterward I had a moment of clarity to give the game a more fairheaded analysis. The problem is that it's painfully mediocre and relies on a few one trick ponies to keep it afloat. If I may exemplify:

If you want a challenging fight, for example, you have to literally grind on enemies for hours on end, since Sans and Undyne are the only monsters that put up a fight.

I don't think the sound design is Mindblowing, it's no where near levels of Silent Hill 2 or Killer 7, it's just that the sound design is consistently what made every joke, every emotional aspect, every bit of gameplay entertaining and fun.
I don't need to give an example, if you played the game with the sound off you would be able to notice a complete 180 in quality. Not to mention you already brought up how every character makes a different sound for their text. Even so, I'll give you another example: Notice how in the Pacifist final boss, every single attack from the opponent feels powerful and weighted, despite being typical attacks. That's solely because of the sound effects of his attacks.
I'm not sure if the 30FPS has anything to do with gamemaker or not, but I hope for the sequel he improves everything, especially by not making it in gamemaker

You can explain the zones with this too. A lot of them are about escapism (the bird who wanted to make its subjects happy, the sugar factory) but it eventually backfires or doesn't work. Batter is just a dad who's tried everything to make his son's life better and is just gonna snap.

Actually, this is something I thought Undertale did right. From what I remember in many situations you could kill the monster and still say it was justified, you just don't get the pacifist ending. People who say it wasn't would take issue no matter what the game did and are deliberately looking for any way to say it was hamfisted so they just dislike the premise.

This is one of the things that makes this game really grating on subsequent playthroughs. If you're talking raw game design, the True Lab is probably the best map considering it actually feels like a puzzle dungeon and not a straight line to the next area.

The dev actually came forward at one point and answered questions about the plot, it was very thoroughly underwhelming. While I don't have any screencaps of the translation (try /igg) I do remember the jist of it.
It was basically nuclear armageddon so some folks decided to bunker down beneath the surface of the Earth and a couple decided to sacrifice their child for the sake of experimentation.They had hoped to transform the child into a Godlike being but didn't take into account what the trauma of it all would have done to his mind. The resulting bloodbath left the child alone and his subconscious shaped the world into the nonsense we perceive.It's pretty thoroughly fucking lame and honestly detracted from how much I enjoyed the game.
It's like those camwhores / models you see every now and then. They do the same boring shit over and over and people still come back, then eventually she does hardcore, or her nipples get shown and everyone saw what they wanted so they pack up and leave.

If you have a gun and a stun gun and someone is coming at you with a knife and both have an equal chance of hitting which would you use? Both are technically self-defense, but you still chose to kill someone over just stopping them if you use the gun. It's the same type of situation.
The story is not god-tier, it's really bad.
For example, throughout the entire game, the characters, world, and entire lore revolves around how Humans are the absolute worst to monsters, and humans are also much, much stronger than monsters. Humans have killed monsters for straight up no reason, and several innocent monsters have died to the hands of humans. However, in the Pacifist route, Toriel criticizes the king of monsters that instead of killing 7 humans in order to break the barrier that allows them to leave the cave, he could have taken one human soul, and then came back with 6 humans to break the seal. Not only did this plan make zero sense whatsoever and was pulled out of her fucking ass, but everyone agreed with her and shunned the king for his actions despite the fact that her son was killed just for going outside with a fucking human.
Finally, when you destroy the barrier using the power of friendship, the monsters completely and easily assimilate into modern human society without any explanation why or how and you never even see any humans, you just see all the monsters in the world doing things in modern civilization.
It's really bad.
