They added several things, but the only things I can remember off the top of my head are 8x speed (doesn't matter for emulation) and being able to switch between two classes.

If your idea of difficulty is how tedious it is to grind levels, then yes, doubling the speed DOES make it easier, and the only thing double jobs means is that you're less restricted, which by all means, is a lot fucking better than having half of the game's skills completely unavailable to you no matter what, not to mention it encourages further creativity in character builds. This is fucking ridiculous, I can't waste my time on this when the new Castlevania series comes out in a minute.

The issue with this is if you're that worried about the game becoming trivial, just play fucking weak mode. A play through of that is legitimately a lot of fun if you like the game a lot. This strikes me as reminiscent of people saying gambits make it so you don't have to play the game. The option to not grind is still there so just don't, it's single player and someone elses experience effects you in no way.

Multiclassing is the reason to play Zodiac Age over IZJS now that we know that it's a thing. Also I'm curious as to how the stats of everything have been tweaked again.

If the game was actually fun to lay they wouldn't have added a speed up mode. The speed up mode is essentially them admitting that the game is boring.
Truth be told I've never not had to manually select stuff despite gambiting as hard as I could. XII just sort of shifts the inputting work into the party menu since you can swap equipment and characters on the go.

The speed toggle is for grinding, and you can beat the game without grinding. You don't need to grind unless you're going after endgame bonus stuff like Subterra or Behemoth King or whatever and suck at jrpgs like me.
There are plenty of enjoyable games that I enjoy more with speed up even if it isn't necessary, particularly on repeat playthroughs.

Unless you don't want to bother shutting the game off, opening a save editor, changes classes and skills every time you want to do it. It's even more tedious if you play on an actual PS2.
gambit system is the double edged sword if XII. on one hand you can rely on it on the harder bosses of the game, but it makes grinding a numbing blur, which i dont mind because of the sweet ass soundtrack.
I'd much rather have that than 'auto-battle' on XIII

It gets a lot more praise now than it used to. Part of the reason is probably because it's nostalgic to people who were kids when it came out. In 2006 it received a lot of hate. There are worse Final Fantasy games, but there are better ones as well.

However, with the XIII trilogy and XV, this game suddenly opened my eyes to what the game was trying to archive. and after a few years in hindsight, it became one of my favorite FFs. fuck XIII, that's the true cancer of the series.

The story disappears right as you reach Mt. Bur-Omisace. It was already thinning out a bit but that's when it just isn't there anymore. I think that's as far as the devs got before the production fell apart. They obviously had the key points up to the ending thought out so the game has an ending, but after the Bergan bossfight there isn't anything at all until Archades. No bossfights, no unique scenarios, no cutscenes, no new characters, nothing. It's a tragedy.
