Several of the critical late game skills and spells are only obtained in dungeons that don't appear on easy, leaving you severely underpowered going into late and post-game.
On the other hand, there is an optional dungeon that only appears on hard mode, which you can go to almost immediately which has an end game spell that will one shot almost every fight for the first half of the game.
I was randomly thinking about this. If I'm remembering correctly, in Rainbow Six Vegas 2, realistic difficulty was easier because the enemies were bullet sponges in normal.

Also on hard mode, characters start at level 1 when they join. One normal, they have preset levels, and on easy, they're always equal to Valkyrie's level.
Because you get characters randomly, you can sometimes get characters that are a way higher level on then Valkyrie on normal. They would get downgraded if you're playing on Easy.
However, characters joining at level 1 is also a good thing. There are accessories that give you bonus max hp and skill points on level up. This lets you give characters more hp on hard mode.
Some RTS games are like this.
Putting them on moderate will make them kind of boom their economy and also harass.
Putting them on hard will usually just make them rush you and you can deal with it more effectively if you know what they're going to do every time, especially if you out-rush them.
