Not really. We don't know nearly as much as western or eastern history but we still know enough to use it for vidya as long as you have it take place in the periods and specific spots we still do have records of.

Like, having stuff in western mexico would be hard as fuck due to the lack of records and ruins, but for postclassic central, south, and southeast mexico, there's certainly enough.

Like, I guess a good example would be we know as much, say, about a number of aztec and maya city states as we do greek ones, say athens and sparta, along with a good solid history of a period of a few hunderds of years, along with all the cultures of that time and those cities, but we just don't have a complete history of the region beyond those like we do in europe or asia.

There was absolutely loads of stuff written during the that period. Colonial adventures and exploration was one of the most popular genres of writing for a fair while.
