Well Runescape to a certain extent, you can just farm stuff (woodcutting, herbalism, fishing, cooking, etc.) or loot from monsters.
You can also play the main exchange, which I remember it being pretty fun if you strike a good deal.

In Star Wars Galaxies you could be a completely non combat trader, set up shop on any planet with multiple building schematics and completely decorate the inside and fill it with vendors. The economy was entirely player based

If you just wanan jew you can try WoW. If you are somewhat decent in economics you can download a bunch of addons to monitor the auction house market, spot trends and use your brain to buy low and sell high. if you're decent enough you can even make the monthly fee with ingame money like eve now.

Don't technically most mmo's let you run your own personal shop? On that note, Mabinogi let's you become a full time trader. Trading goods from one town to the next, checking each town to see what goods will get you the most profits in which towns, and avoiding or fighting off bandits from stealing your cargo.

That means no quick travel to take you to a centrally located capital, long travel times normally, and content that can be found everywhere and not in hotspots

Not really but it really knows how to do comfy. There's a ton of skills and shit that don't always require you to go into combat, in a sense that you can take up whatever and just indulge in it. Things like blacksmithing, tailoring, herbalist, carpentry, cooking, playing music, adventuring where you get to do stuff like fishing or making campfires to heal or burn shit or digging up or skitching artifacts and monsters. The game is skill based so every skill you learn and level makes you stronger so none of the skills are completely useless. The game is flawed as hell but it knows how to do comfy.

If you want to make secondary jobs really important in a MMO you have to introduce hunger, weather changes (hot or cold environments), diseases and skills you can truly learn only after weeks. nobody wants a dungeon cleaner who can cook, be a blacksmith and do every other job in the game, this kills every other job

This guy's spoiler is a good enough summary. In my opinion they're just trying way too hard to be realistic through simulation rather than actually being realistic in practice. In other words, they're poorly mimicing reality with in game systems in a way that doesn't lend itself to produce realistic player behaviour.

It's their sub fee and even if you die at every single available oppourtunity it's still a 6 month life. $5 a month isn't terrible. Sure the less deathful $2.5 a month is better but still.
The real problem is a character dying means a stat reset, which basically turned me off from the game entirely.

You missed the part where the game revolved around abusing macros and botting to master your skills rather than playing the game, just like every single game with a similar skill structure.
You also missed how no one would buy your shit unless you were 100% maxed, meaning you basically HAD to have a combat character to have any income before your craft character skills were maxed.
You also missed how 9 times out of 10, that 'player based economy' meant fuck all because players only bought from their guild crafter, and there was no centralized market to regulate prices.
You also missed how SWG had one of the most cancerous, afk/botting abusing resource gathering to ever be in an MMO.
You missed how, mechanically speaking, SWG was complete garbage and was only good because A. it was the only star wars game that didn't make you a hero off the bat, and B. it existed during a time in which people actually interacted with each other.
I miss SWG too, but lets not let the goggles fool us. Its crafting game was shit.

Almost all mmos have a f2p period up to like level 20 or so so go try wow or swtor or whatever. It's all mostly theming and how much end game content there is.
