Slight mutations happen and then are pushed to their extreme by natural selection and then that repeats for millions and millions of years. Couple that with the fact plants have been around longer then most other multi-cellular life it seems pretty likely something would end up mimicking it,

The leaf like insects kept surviving and reproducing. The very first leaf insects were probably barely plant like and it was just a mutation. Yet these guys managed to not get eaten for enough generations.

I mean if you look like a leaf, both your prey and the predators that hunt you are less likely to see you, making you more likely to survive.
Now repeat that selection process some thousand or maybe even million times and you get insects that look almost exactly like leaves.
