The controls are perfect, tight, responsive, every button press registers.
Difficulty? Despite the weird reputation this is definitely one of the easiest SNES games. Precisely because it is so forgiving.
I would deny the visuals are a huge portion of the enjoyment but forget graphics "for its time" man I ran this shit from my Wii U into my 4k television and its never looked better. Like I'm noticing details on the enemies I never did before. CRT cucks on notice.

It's not nostalgia (for the most part) but the fact that older generation games kept their designs simplistic, which does fucking wonders for the core gameplay.

Because it shifted the focus of the series to a dumbed-down 3rd person shooter with extremely linear level design with chest high walls indicating obvious combat zones before you even reach them. ME1 was a space opera with exploration and universe-building. ME2 threw that out the window and had a plot that was completely pointless.

You're right that the world building fell off after 1, and I didn't enjoy 2 as much as 1 and never played after 2 (saving myself from a lot of disappointment it turns out ). But 1 had a lot of these issues.

I think it's up there as gaming's greatest sequel. I mean, it's tough to think of an area where DKC2 doesn't improve on the original. Collision, level design, music, secret design, enemy design, boss fights, atmosphere, playable characters (Diddy/Dixie>DK/Diddy), level count, etc. It's the perfect sequel, my favorite SNES game, and has the greatest game ost ever.

Something I love about DKC2 is how each level feels different. You're not just going left to right, but in many levels you're also going right to left and climbing up and down (something perfectly encapsulated in the second level and pretty much every even-numbered level).
Every level has a distinct feel and mechanic/style of play to them. You are just very incorrect.
