When I think of entry level I think of 2D platforms so probably Rayman Legends. As for a game I adore probably Metal Gear Solid 3: Subsistence.
Dwarf Fortress is super fucking niche, but it's unique enough that everybody should try it out for themselves at least once.

Those two are also pretty niche, but if you fall into the camp they appeal to you'll love them. The Wonderful 101 reignited my passion for vidya and the ending was the best I've ever seen.

If you can rope some friends in, pop in a New Super Mario Bros console game and get a case of beer. I marathoned the Wii game with friends and it's the most fun I've ever had playing a game.

When you're done with vanilla try it on PC with the Long War mod. It adds enough to the base game to feel like an entire new expansion to fuck with. The first year or so of a Long War campaign is the most fun I've had in a tactics game, though it turns into a grindy slog once you've had plasma weapons for a while.
Super Mario 64, including the remake on DS.
Don't Starve is a pretty solid game. it's a rogue-lite with a Tim Burton-ish art style.
