Factorio, I guess. With mods, this game really offers quite literally thousands of hours of shit to do.
Or I'll go and do another gimmick build for Fallout 2 or blow some steam with Painkiller or Shadow Warrior 2.
Stalker Call of Chernobyl has been recently proving to be a pretty interesting time-sink too, with the infinite game feature.

A lot less than most people think/claim.
Factorio is a master of organic "small, simple tasks and systems adding up to each other naturally, eventually leading player to create great and complex machines without ever realizing that is what he is doing".
It has near infinite depth if you add mods, and it heavily focuses on optimization... uh, options. But the core systems are actually pretty simple and it all adds or grows mostly very organically.
It does require a bit of patience to learn the few hours (tutorials could be little better, the first few hours of learning stage can be a bit confusing especially if you are impatient), but it quickly does turn into pretty smooth sailing.
The game gives you quite a lot of freedom to be as "autistic" as you yourself seem fit.
It's not an action game though, so that needs to be kept in mind. It's actually most close to city-building games to be honest.

Angel (especially "full Angel, that is Angle+Bob) is just completely insane. I enjoy it, but I would not ever wish it on anyone else.
But I have to say, something about the resource logic in Angel is INSANELY satisfying. I really think Angel is good. It's crazy and not for most people, but unlike Bob alone, which I think is mostly complexity for the sake of complexity, but not benefiting the actual game, Angel actually changes the game in profound and amazing ways. It's cool as ever living fuck.

I tried to fall back on that, upping the difficulty to make it feel more fresh. Problem is, I cant get past the intro.
Dark Souls 2, as it's the most replay-able of the bunch.

I agree, though I would have hoped for more energy generation methods. I can add other mods of course, but none of them are designed to play with angel's or bob's for that matter.

There used to be this very extensive nuclear energy mod pre 0.15 release that was designed to tie up into Angel/Bob combo that was cool as fuck, but they did not update it after the "official" nuclear energy mod came out. Which is a shame, because the nuclear energy production in that thing was actually a lot more fun than it is in the official vanilla 0.15 release.
Other than that, I never particularly missed any other energy source option. I think managing your fuel production in Angel is actually fun enough on it's own.
My only issue is that - at least it seems to me - that right now making nuclear fuel in Angel is WAY too much pain in the ass. Either you use left-over mineral sludge, which just does not produce enough (and creates useless abundant fluorit), you go the break-down refining process which still yields too little and leaves you with TONS of largely unneeded by-products, or you go the synthetic refination which requires very, VERY late game infrastructure, the levels of which you won't even begin tackling until you have 2/3rds of all research already done.
Seems like nuclear power is just too much hassle and not worth it in Angel.
