This is very common misconception.
Just because "sen" means "thousand" in Japanese doesn't mean it's "the fortress of a thousand traps".
The original clearly spells センの古城 meaning Sen is not a native Japanese word and most likely a given name. And it doesn't say anything about traps either. The fortress of a thousand doesn't exactly sound grammatically right even in Japanese.

He wrecked the big 4 of whoever that were during his lifetime, not the original DS1 bosses, since the player character killed those. Although I guess being on par with the player character is an achievement on its own for NPCs.

Seath, the sorcerer dragon who possesses all the knowledge beyond the Vinheim college and very much sees Logan as both a threat and an asset, later improved upon its construction to better suit his wills - in fact, he collapsed the tunnel to Anor Londo, populated it with his serpent mutants and giant slaves, and installed the Iron Golem there expressly to stop Undead from coming in and interrupting him and the affairs of the city of the gods. Originally, it was just a simple proving grounds. The demon bats, however, still understood the prophecy of the Chosen Undead, and would escort anyone who managed to defeat the golem to the city. Remember, the golem had the ability to cut blades of the air itself - he would have imperiled the demon bats. In Japanese the Sen is the first word and fortress is the last word. Same order translation would be (The) 1000's Fortress. Boulder wouldn't change the grammar problem.

Objectively the hunter because they killed literal extra-dimensional gods in the form of the old ones. After the hunter is the Ashen one since he killed the combination of all the Lords of Cinder into one being. Followed by the Ashen one is the Chosen undead and Bearer of the curse killed demi-gods and husks of powerful beings.

The only NPC that says the word "Sen" is Frampt, and that's where the player character gets the "SEN'S FORTRESS" intro from. Even if it was stricken from history, Frampt still refers to it as that, because Frampt knows. Of course he knows. He was there from the beginning, before Oolacile, which was about when the first iteration of it was finished.
