It's an ok gameplay mechanic if done correctly, such as Eventide Island in BotW.

By removing the gear a player heavily relies on to take down enemies, it creates a challenging enviornment for the player to show that thye have mastered combat techniques or other gameplay mechanics (such as stealthing without +stealth gear etc).

Also, only autists would be mad at having to reorganize their inventory.
