He's said multiple times that he doesn't really do Freeman's Mind for fun or even money, he does it cuz so many of his fans ask for it and he doesn't like letting people down.

I'd say he just stops, because he doesn't actually enjoy making these. But then again, it's Ross, I wouldn't be surprised if he would make episode 3 himself.

Start with episode 0. The alternative ending after the credits of the final episode is a non canonical joke ending.
Episode 61.5 is a non canonical good ending where everything works out for Freeman. Episode 0 is the tutorial.
