Those are debug-only however.
The Advance games fixed this issue I believe, by making Sonic faster and giving him unique moves.
Because he's the normal difficulty.

I feel like the intentionally fucked Knuckles over with the level design. Most climbable walls either lead to an instant dead end, or you'll wind up climbing them for 30 seconds before finding out you can't glide anywhere useful once you get to the top.

I think it's either in extras or options but I haven't unlocked it myself yet.
Only Advance 3 did to any meaningful extent. In Advance 1 and 2 everyone is the same speed, and everyone gets some melee move. In Advance 3 only Sonic gets the Advance 2 speed naturally, with other characters having to pair up with him to get it as well.

Ability from Sonic CD that's in Mania as an unlockable to be used in no save mode, makes him run from standing still, like the spin dash but a bit faster and he isn't rolling. You hold up and mash jump.

Not really true, Tails and Knuckles can match Sonic's speed.
Tails and Knuckles feel noticeably slower than Sonic in Mania. They don't have the same pick-up, but they do get the same top speeds if they get launched.

Sonic had the insta shield and now he has the dropdash and he can use elemental shields. IN SONIC MANIA AS SONIC & TAILS YOU CAN HAVE TAILS FLY YOU BY HOLDING UP AND THEN DOUBLE TAPPING JUMP. Sonic is the best character for that alone.

In Donkey Kong Country DK was the inferior one.
Playing sonic is playing the game on Normal. Playing the others is playing the game on easy.
In S3K Sonic benefited from shields and had extra reach via insta-shield.
Mania makes him the outright fastest instead via drop dash.
Tails has always been easy mode, just with the caveat that he can't get Super until Flying Battery in S3K.
Knuckles is more of an alternate playstyle than a difficulty. His low jumps make him feel heavier and he's more suited for exploring. He also functions as extra story content.
