Make more quarrelers. They are amazing for their cost, and remain a solid unit up until you face heavily armored enemies in large numbers. A warrior/quarreler split army will be a very solid one for dealing with most greenskin units.

First rule to remember in total war is that the AI literally plays by different rules. The developers couldn't manage to make enemies actually intelligent or anything, so as you increase in difficulties all that happens is they get more cheats and you get fucked harder.

You are only out to sack factionwise when playing as one of the evil races when you know you can't hold the territory. With dwarfs you want to slowly expand across the mountains and get every unique mining building for massive income boosts.
