I've recently played Persona 5 and Trails of Cold Steel and really enjoyed them. Can anybody recommend some other JRPGs for PC/PS3/PS4 that are similar?

Yep. Can't recommend Sky highly enough. I really love those games. If you enjoyed Cold Steel you'll almost certainly enjoy Sky.

2 MIGHT put you off since they've added more comedy in it completely neutering the horror but it's still pretty damn good.

What exactly did you like about Persona and Cold Steel?
If its the story then you might like some of the Aquaplus SRPG titles like Tears to Tiara and Utawarerumono. Both series feature very good but linear stories.
However they are more visual novel then RPG so its a lot of reading to get through, definitely not for everyone.

If you have a 3ds IV is a great starting point. Nocturne and dds1 and 2 are emulatable and on sale on the ps3 store. I am not sure if they are also on the ps4 store
