So I gonna play Pokemon Red, Blue, Yellow and Green again. Is there any self-made challenge to do while playing every version of Pokemon? Task, objectives, rules, ect.
Pokemon Challenge
Nuzlocke, monotype, monocolor are the more common ones. Though it might be a little limited given the smaller roster in gen 1.
Nuzlocke is the de facto thing.
You could implement other restrictions too.
I personally like not grinding at all, only trainer battles and only using 6 pokemon and releasing pokemon if you wanna replace one. Kind of a modified Nuzlocke

What I liked to do was not use the pokemon center to heal but instead use potions. Once the pokemon was fully healed then use the pokecenter to restore move points. Makes managing for pokeballs, tms, and healing a bit more difficult.

other than that, maybe just have a 3-pokemon rule for gym encounters.

Just want to point out Nuzlocke doesn't sound like a fun option if you really want to play through all of them entirely, as you run the risk of a game over and starting over from the beginning.
Any challenge or restriction you impose on yourself will ultimately be overcome incredibly easily as soon as you catch a Snorlax because Snorlax is so fucking powerful in Gen 1 it's not even funny. So don't catch one.
Depending on the game it could be hell to get through early game
if you don't grind prepare to have elite 4 be like 20 levels above you, even if you do grind it's not much better because the next best place to grind is the pokemon mansion whose exp yield is slow as fuck if you're around 50. If you don't do permadeath you can grind the elite 4 but it's a bit cheesy.
And make sure to save the good TMs so you can dupe them later. Avoid picking up the crap ones if you can help it because the combined space of bag + PC is not enough to hold everything you get
I'm not hardcore enough for nuzlockes, my rules aren't too difficult.

it's way more rewarding catching things in regular pokeballs since it means you either need a lot of luck, or you have to use status and carefully deal as much damage as possible.
