How do you deal with this situation? If you try to attack, either his attack of his horse hit you and interrupt your attack. If you try to block, then his horse will hit you, stunning you, and he'll hit you with his weapon. You can't run away or otherwise maneuver yourself out of his range.
Yet if you're in his situation, with a horse against a footman, for some reason he has the advantage. He will always attack you, and his attack will always hit you directly, no matter what you do. Every. Single. Time.

Move to your right where he can't hit you. Even if the horse charges it will do like 1 damage and he'll probably hit a wall or something. Then take the opportunity to knock him out, or take out his horse first, whatever fits best

Side step opposite the his weapon and then side swing into the horse as he passes. Do massive damage and use the horse's speed against it.

Do an overhead swing with a long enough weapon while moving towards the horse. A bastard sword will suffice. If you time it right, the speed bonus buildup will guarantee that you kill the horse and get the upper hand

I just can't figure out how to beat a horseman if I just get unlucky and spawn without one. They always charge me and then hit me with their weapon, regardless of my blocking or my position. I can survive one because it only takes half my HP in total, but when another one spawns, that guaranteed free hit will kill me.
