I really don't understand why they didn't release crystal as well. It makes literally 0 sense

Crystal is a straight improvement over GS (lack of Mareep and Ho-OH and Lugia not having access to their signature moves aside) where as Yellow was more of a side grade. They're holding off so they can sell it later.

it's an autistic addition that exists for min-maxing.
