Technically it takes three hits to stun him, then you go in for the head hit.
Might be a NSMB situation where a ground pound does double (haven't watched the second video yet though).

Knowing Nintendo, there's probably a fight later on in the game where you have to fight a harder version of him. Either there's more than one of him, or you have a limited life-bar, he has trickier moves, he's stronger, there's something in the background fucking with the fight, etc.
Mario and Kirby at least love doing that shit.
I watched both videos and I think the reason it took two hits to defeat the green hat broodal is because the player did a butt stomp on the second strike.

Some Mario & Luigi bosses were hard. Also that fucking Cake in Mario RPG was a pain too.
the thing about mario bosses, is that design-wise they are awesome looking. pretty much all the bosses in 3d world, galaxy, galaxy 2 and sunshine had great designs. they just died way too quick.
The 1st boss you posted is literally the first boss fight in the entire game. These guys are minibosses.
Even Gameboy games had better bosses.
I honestly don't think he was meant to be heard. It was like fighting Borden after Shinkai, Yu Yevon after Sin/Jecht/Aeons, Sephiroth in the lifestream after Safer Sephiroth, etc. Just a playable cinematic clean-up after the actual fight.
Then again, those fights didn't have NPCs blow away half the bosses' health before the fight even began, so...

Octopus boss looks fun desu. I like how most of the world can be where you battle him, that's a fun concept. Mecha Wiggler looks fun to battle too. We haven't really seen enough of the bird to say much about them yet. Also,

Mecha Wiggler is definitely the coolest one they've shown so far, but King Kaliente 3.0 looks fun too. Bird looks a little boring though.
