Nothing is wrong, it's just that with Unreal 4 doing all the work for devs, getting good looking realistic graphics isn't a crazy achievement more, and people are now starting to recognize the importance of art direction.
It's why games like Wind Waker have aged so well.

But Crysis aged pretty damn well too, all things considered. The only thing that ever sticks out to me as pure shit in Crysis are some of the rock textures. I dunno why, but some of those are just straight ass. The water and lighting are still pretty great and the per object motion blur with ridiculously detailed physics makes for visually appealing explosions and destruction.

Designers stepped back from seeing game visuals in terms of raw technical output and started playing to the strengths of more primitive aesthetics as their own design language. There's no reason that 8 and 16 bit looks NEED to be abandoned just because we have better computers today, especially if they can still be used creatively.
Lowering the barrier to entry for game development can help a lot of fledgling designers hone their skills and test unproven ideas without the monumental time and financial investment of today's best looking games as well

Sure, but the default time of day settings don't make for very impressive looking areas, ToD mods are a zero performance impact improvement. Just choose one that looks like you prefer it.
Because old-school graphics don't sell to the Call of Duty audience. Smaller devs don't have that restriction.

You are right, Crysis aged great, but a lot of little things havent in it. The facework on characters looks really dated, where Wind Waker, 30 years from now, it's just gonna be like "oh it looks like a cartoon" and no ones gonna be like "oh thier shaders aren't realistic".

Many games don't have a focus on aesthetics because it's not even their intention, they might want to have a smaller budget in order to try out creative mechanics, what matters in the end is if the game is fun though.

When you start to make monsters way too realistic, they either blend with environment, so with the same result you could put tree model instead of one, or you had to do REALLY much work on design and modelling, which no one wants to. So today you either get another CoD with another "bald one-man-army against absolutely same human enemies", or something, that doesn't even try to get realistic.
