How lost am I going to be in the series if I never played 1-3 but playing UDG?

Got partially into chapter 1 and the game already reminds me of Resident Evil 4-6 and Dead Space 1-3 gameplay wise.

DO NOT play UDG first, it contains MASSIVE spoilers for DR1 and 2.

You should at least play DR1 first.

UDG storywise is between DR1 and 2, and will spoil you on some stuff from DR1 at least.

DR1's a good game, you should play it.

I already read the synopsis for DR1 and 2 so I pretty much know what happened in those anyway. Have a feeling I still missed out on some even after reading the synopsis.

Well if you read the synopses you should be good. I'm guessing you don't have any interest in a full-on VN game. Anything you think you're missing in UDG is probably just things that are covered in that game. The Warriors of Hope and Towa City are not mentioned at all in 1 and 2, and even Komaru is only mentioned very very briefly.

The VN sty;e DR1-3 does would probably bore me, but at least UDG is keeping entertained since its more actiony than story although it still has a story you follow.
