While on the surface a 'skip boss' button would be fine (assuming it can be permanently disabled at the start) the issue is that developers would just be even lazier about making decent boss fights. Boss fights are already a rapidly dying art, with very few games doing them right (funny I am making this post right after cuphead came out) and having a skip button would only exacerbate the situation.

Most games already have the option to change the difficulty out of combat, and if you die you typically respawn right before where you died out of combat. What's funny is the bosses in BotW are completely optional. You can do and see everything the game has to offer, including the final dungeon, without fighting a single boss. You just have to fight them all at the very end of the game if you want to see the end credits.

An exploration mode for something like Ass Creed isn't a terrible idea. An option to skip boss fights and not the rest of the combat is pretty fucking stupid though. An option to skip all combat leaves players with basically nothing, and if that's what they want, they should pay a fee for the feature. Having an actual button prompt appear during a boss fight that literally let's you skip to the end sound absolutely ridiculous. If people feel like a game needs a way to "skip" a boss fight, that's just because the game has a really shitty boss not because all bosses need them.
The problem with making skipping a boss as easy as pressing a button is that it removes any sense of accomplishment. It's impossible to implement this without it feeling like a "give up" button and no one's going to enjoy that.
Having a skip option may also have the unintended effect of persuading inexperienced players to give up on a challenge too quickly when they might have conquered it if they just gave it a few more tries.
For me, their issue isn't boss fights in general acting as roadblocks and they need hall passes to the rest of the game. The issue I see is most boss fights acting as challenges with not enough "solutions". You either "git gud" and beat some bullshit difficulty spike or you don't get to play anymore.
I'm not completely opposed to the idea of being able to complete a game without actually fighting said boss. Let players be able to circumvent a boss fight as long as it still offers something to give them a sense of accomplishment like finding a secret path around the boss, or perform some action in the games environment that removes it entirely!
Take a game like Metal Gear Solid 3, where you can defeat a boss with out firing a single bullet by waiting for him to literally die of old age! Rather than skipping over the experience, give them one that better fits their play style and is just as valid. This won't stop Sup Forums from having predilection for certain solutions and judge others for their choices, but it's a hell of a lot better than just skipping it.
If they want players to have their dessert without eating their dinner first then give them something their stomach can actually handle. That's a terrible analogy, but you get it.
