you still have to ring the bells even with sen's gate skip to finish the game, you don't skip any content by doing just that. it's just another way to tackle challenges out of order.

Why is that? Does the game check if the bells were rung, or what?

There's two ways to access Firelink Altar after getting the Lordvessel: via Frampt who shows up once you have rang the two bells, or Kaathe after beating 4kids. Needless to say beating gargoyles and quelaag is the faster of the two, so it's the one speedrunners go for.

Oh of course, forgot about Frampt. I pretty much ignore the Kiln in most of my playthroughs.
