Personally I hate it. NWN2 had the worst implementation of it I've ever seen too.
I liked Fallout 4's, but it didn't really have to do with the crafting itself and was primarily because weapon modding actually made a difference. It wasn't just "mod this weapon to make it better", but also "mod this weapon to take a different ammo type and choose between whatever mix of rate of fire, range and accuracy you want.

90% of mods were exactly that you fuckwad. Basic>Light>Hardened>Advanced. Large Standard Mag>Medium>Large. Supressor muzzle was the best muzzle with a negligible range decrease, no recoil etc.
The only difference was whether you wanted an automatic receiver or not, which would be a completely one sided choice depending on your chosen perks.

I like it, up to a point. The point where I don't like it is when you spend half the time looking for Quality 590 parts to optimize your build instead of playing the game. It works best in games where resource management is a thing.
Fallout 4 went overboard with crafting, just like with the build-your-own settlements thing. If anything, the supposed variety and freedom brought by those features would have been better supplemented by modders.

this isn't false, but you're neglecting the fact that this was only reliably possible with those awful pipe weapons and you really had no reason to use anything but a few barely customizable weapons.
Yeah, this. I loved the idea that they put this in if only for the sake of real weapons (M9, USP, M4, UMP, etc, etc) but I ended up using silencers on everything anyway.
Glad it's there for that sake, but I rarely took advantage of it. Especially because by the time my mod weapons dropped they had most of the stuff I wanted equipped anyway.
Players like collecting things, crafting makes useful things out of things that would normally be pointless to collect, stripped apart the whole process isn't fun, it wasn't actually fun to collect random junk, nor was it fun to use a menu to make a useful item
This begs the question of why don't they just give you the useful item straight up, well players need breaks and need to feel like they've done something to earn that useful item, and as mentioned before players simply enjoy collecting things so this gives meaning to their collecting, adding these barriers to the actual gameplay makes players feel both more immersed, since they are the ones making the item, and also makes them feel like there is more gameplay than there really is.
I hate crafting more than almost anything in videogames. I hate crafting more than the loot boxes that people are memeing about because their unter-jewish overlords are directing them to strike at the reigning jews. I hate crafting so much it was a large part of why I detest Underrail.
So it's just a bunch of bullshit for idiots.
So if everybody hates it, why do developers insist on including it?
The same reason Ubisoft open world design, half-assed rpg elements and all that other shit is so prevalent. Industry trends.

Depends on the game. If you craft because your shit breaks and you have to keep remaking the same weapons time and time again, than I dont care for it. If you have to craft different items that all are useful and not just better versions of older items than I love it. Same with weapon crafting. I like it when it just modifies guns to fit your playstyle instead of just wasting time directly upgrading weapons to be stronger.
I like the cosmetic aspect of it but scrounging for parts isn't much fun. Playing Fallout 4 was like being a glue sniffing addict with OCD.
4 is the shittiest fucking game ever. It has to be physically impossible to make a shittier game.
