I figure it's because being the "big guy" is usually for bosses, since some are meant to be intimidating and unflinching. The only way you can really make it work for a playable character is if you can mess with stats, equip or use items that let you facetank everything without flinching or knocking you out of attack animations. At least long enough to handle one fight to a time.

Most mech games that feature armor as a viable option, and places the burden of advancing on the smaller mechs not able to mount artillery cannons on them.
Slow Melee only works if the character is literally designed to be a tank, and has some way to force others to fight it instead of more pressing targets.

EDF's Fencer is only slow if you play him as intended but you can go full artillery platform with him online. Slap on a couple of massive tank guns or mortars, get yourself some high ground and just slowly plink away at everything that moves. You're a turret with legs. You'll need those legs by the way, the guns are so powerful that you get rocked back even in an exoskeleton
And I say "as intended" because he's actually the most mobile class on the ground if you take a dash cancel loadout and use it properly

I guess it's partly true for SRWs. In some games, the "Potential" skill SR pilots have can reduce most damage to like 10 while boosting their own 2x when their health is low.

Most games have quick dex builds have the highest potential because they often require more player interaction. If you can choose an alternative that's easier and better than than people are less inclined to use it. Making a risk/reward mechanic where a beter outcome comes at a price of more involved gameplay and risks often feels best to play. Check out Mark Browns video on "protecting the player from himself" in case you don't know what i'm talking about. If you don't care about the invasion mechanic and play off-line. (I played it relatively light and dex, but played off-line regardless. It holds up either way imo) The darksouls games tend to facilitate tanky and heavy str builds pretty well. mobs and above average mobs tend to be a lot easier to plough through. But if you are really heavy, slow and fatroll, some bosses and very small and fast enemies become more challenging.

The slower characters like Charizard and Machamp are considered on the not as good end, generally, but Pokken is absurdly well balanced and you can still do well with them.
With both Zard and Especially machamp, they can have trouble getting in due to their lowspeed, but when they do actually get a good hit in, that one hit can do 1/3 of your entire lifebar.
There was one match (as in two rounds) that was over in less then 30 seconds because the Machamp player was able to make all the right reads and calls and just ended each round in under 15 seconds.
