I usually don't care for Yandere characters, mainly because they come off as clingy to an extreme degree.
Despite Monika's rather horrific actions, she never came off as clingy and desperate to me, so the extreme measures she took came off as oddly romantic and kinda hot rather than disturbing.

Part of it is just a normal reaction to sheer perfection so great that you know it will never be obtained in our reality

Monika isn't really a yandere, at least not a typical one. Doing "morally questionable" things in the name of love isn't always related to yanderes, a "visible high level of craziness" and being very "aggressive about jealousy" are also part of the package, but Monika stays as a "cool and reliable senpai in love with MC" until her very end (and after it).
Monika is more like a "scheming" kind of character, manipulating people (and the game) for her own goals, but with love (or unhealthy escapism) was her ultimate objective.
