Because the moons are just kinda sitting there in most cases, and you can't really fight bosses in context repeatedly, the game has pretty weak replay value next to other 3d mario games.

I was pretty pissed that Mario and Peach didn't get married. They were definitely building towards that and they wasted the opportunity. That's my biggest complaint and it is a story complaint so it doesn't actually take anything away from the game for me.

X is effectively worthless in the game. Some people alternate A and B for jump, but most people just press y for the hat throw.

The whole fucking thing was wedding themed. It really seemed like they were going to do it. I don't see why not. They clearly want Mario to feel fresh and new again and that would have been a great way of doing it.

It definitely feels like they went for quantity over quality in some cases. It's the same thing with BotW's Korok seeds. I think Nintendo is going through some kind of Ubisoft style collectathon padding phase and I fear Metroid Prime 4 is going to suffer from the same thing especially since Retro isn't developing it.

Well it's almost like they should've have added less moons into the game and make them more rewarding to find.
My main complaint is the way the game wrests control over the camera from you (infuriating when looking for purple coins and Moons), and coming from a Hat in Time with its extremely fluid action and longjump-canceling Mario handles like a shopping cart by comparison.

I love the physics and the way it plays overall but the level design is pretty weak. I was pretty disappointed there. I guess I expected more after seeing New Donk City in the trailers. That level lived up to the hype for me despite not being very wide, but everything else was just kind of meh.
The only purpose their relationship serves is that it encourages mario to go save peach, which wouldn't change at all if they were married.

Maybe the Lost Kingdom, but even then I'm not sure given its density. People are failing to remember that levels have height as well as length, they look at the map for Lake Kingdom and forget it's not a flat surface.
I was gonna suggest ZR for dive, and X for Cap moves. Like, Right+X to throw your cap in a circle, or Up+X to throw your cap upwards. In the two-player mode, the left-stick is reassigned for camera movement when X is held, so reassigning it for cap moves when X is held in one-player mode shouldn't be a problem. You could also hit X after throwing your cap to do the homing move.

Biggest complaint is how small Lake and Lost Kingdom turned out to be. I was really, really hoping for an Atlantis-type kingdom. Lost is my favorite Kingdom, but it's so small.

Those levels where tiny and the stars only took a few minutes each. The only levels smaller in Odyssey where the arena levels.
So I finally got to the dark side of the moon and it was kind of disappointing. Was hoping for a better location. Couple that with the fact that I grinded out moons quickly to get to it and then find out I need another 250 after that. Is the next place actually worth the grind or is it just another filler level?

There are "kingdoms" that are literally a walkway to a boss arena.
It's something of a platforming/capture challenge.
It was basically the old SM64 Bowser levels. Linear path straight ahead, but this time broken up into segments. The old Bowser levels were the most pure platforming ones in the game as well, so it figures.

It's meant to be a challenge, but it isn't actually that hard. You get another thank you when you beat it, then cappy says going on an adventure with you was amazing, you get a multi moon and that's it.
I liked it, but then again I got the 500 moons without it feeling like a grind, so if you aren't having fun then you probably won't feel like it is worth it.

If we want to talk boss fight recycling, 3D World recycled bosses from a different game.
Odyssey was pretty close to beating out 64 as my favorite 3D Mario game. My main gripe is that most of the soundtrack is too subdued. Wooded Kingdom and DONK CITY were the only two that stood out for me. Anything else that caught my ear was a remix of some other song in the series. 64 reused the same few songs a ton, but Kondo really nailed it. The songs were not only catchy, but ambient. They lent themselves perfectly to that subtle creepiness a lot of early 3D titles had as well.
I played a ton of Mario 64 and Sunshine as a kid and I'm enjoying it a lot. I just finished 100%ing everything before dark side and those dark side hatless levels kicked my dick in.
