I've never played a soulsbourne game. Where do I start?
I'm inclined to start with Demon's Souls, is this a good way to go? I suppose I'm somewhat hesitant because I don't want to buy a PS3 for one game that I'm unsure of. Yet I'd prefer to start at the beginning.
And a much more important question: what is the best/definitive version of each game? PC (where it applies), console, etc.
Dark Souls 1, Blood Borne, or Demon Souls are the best to start with.
Demon Souls is PS3 exclusive (Though an emulator is being worked on)
PS4 exclusive is BB, and PC has all the others.

Dark Souls 3 is the easiest game in the series, Bloodborne is the best, and DeS, DS1, and DS2 are a matter of personal taste. Bloodborne is also the easiest to learn, I think

Demon's Souls is a nice place to start as you get to see the progression of the mechanics and stuff. It's also the best one. DaS1 is also a fine starting point too. It is. There's glitches with the shadows and lens flare, and there's some extra slowdown even on very powerful hardware, but it's very much playable.

They get harder as they go along. But not drastically harder. they aren't actually difficult. Common sense, basic problem solving, and Pattern recognition will get you through about 80% of each game. The rest requires all of the above and some semblance of skill.
The series is only heralded as hard because of the brain dead crap the general populous is fed with current gen Triple A games.
PC versions of the game are best if you get the fan patches that fix From Softs terrible ability to port games.

Don't play DaS2. Play it's infinitely better version DaS 2 Scholar of the first sin on either ps4 or PC. PC preferably.

It's more fun to play DeS and see the roots after. Then set NG to ++ and do another run through.

It's really not. You haven't played Demon's souls recently. You equip a certain shield and ring and you are regenerating 3% of your HP a second. Only two enemies have any actually difficulty to fight. the Flame lurker and old king. compared to later games in the souls franchises it is some weak shit.

DaS 1 on PS3 is active enough to get coop and pvp in the main hubs of the main game while being relatively free of hackers. For DaS2 play on PC.

Des on Ps3 because it is the only version and the emulator still gots flaws no matter how good your computer is. DaS 1 - 3 on PC because they run better. Don't play the original DaS 2. Play Scholar of the First Sin. It's the definitive version fixing tons of problems the orignal had and comes with all DLC. Bloodborne is only on PS4.

it's cool going back and seeing the progression from practically an arcade game, to what we've got today.
Particularly, going between King's Field 4 and Demon's Souls is a real trip, because Demon's Souls really still has a lot of King's Field "feel" to it in terms of level design and world design, not to mention the music, which is really simplistic and has an obvious synth feel to it.
Old Hero's boss theme sounds like it would fit right in with KF4's music.
Honestly, I kind of miss the simplicity of Demon's Souls' soundtrack. I feel that as the souls games progressed, they got way too full of themselves in the music department. it became about "let's see how epic and bombastic can we make this boss theme! Needs more faux-latin vocals! Add more brass and percussion in there!"
