OK, I really don't know how to feel about this game.
I really like the exploration and the world design and some of the mechanics, but everything related to combat is ass.
I'm like 14 hours in, and I still can't fight anything other than boboklins or lizalfos, every large enemy kills me in 1 hit with full HP and medium sized enemies like guardian sentinels make me lose my entire arsenal in the battle.
Does this ever changes? or is the game always a struggle in this sense?
It's not really about combat, just like every single Zelda game, save TP. I understand if it's not your thing. I do agree it is one of the weaker ones when it comes to combat.
Hopefully that is rectified in the upcoming sequel, that is most definitely coming.

I actually appreciate the bare minimum approach, it just went a little too far.
OoT/MM had simplistic combat mechanics but the game design complimented it.

armor greatly helps you take biggers hits guardians aren't supposed to be dealt with by smacking them with traditional weapons, they have multiple weaknesses enemies spawn as stronger tiers as you progress through the dungeons, but they also generally spawn with stronger tier weapons where you'll be able to beat things up using less hits with a more durable weapon

I think that's my biggest issue with this game. There is no in between. It's either really difficult or piss easy; either through experience or gear.
Playing through again on master mode and I just 5 shot the wind ganon on the bird divine beast.

Learn to parry and learn to sneak. You can get strong weapons early on and even right outside of the plateau. Skeletons are your friends

Anyone else think the dodge slow-mo mechanic is a little messed up? For some reason I don't get the slow-mo when I clearly dodge with right timing, but other times I get it for jumping just after an attack or for jumping with proper timing but out of the enemy's range.

Actually, you can't get one shot from full health, it will always leave you with one quarter a heart. So as long as you keep your health full you'll never lose unless you get hit hard twice really fast

There's a few things you need to consider OP. BotW is designed to buck the trends of previous Zelda games - to take them out of their comfort-zone. So for much of the early the game, the player is on thr backfoot. Walking into fights and mashing buttons won't work. You will get your shit kicked in.
The more shrines you do, the the stronger you become. You more you explore the more koroks you find, so the more you can expand your inventory and carry more weapons. The more items you find, the more you can upgrade your armour. As you defeat each divine beast, the weapons available in the world change you will find more powerful stuff.
It's about player-empowerment through progression. Even stuff like climbing in the rain becomes a non-issue after a while.

There are no Ice Lynels. It's either regular, blue, white, silver or gold. Their weapons change depending on the area and they will gain ranks as you progress further into the game. There are two Lynels that will not change, I believe, and they are in fixed locations.

You can upgrade your climbing gear yeah, if you have found all 3 pieces you will get a boost when worn.
But the best thing is to learn the special ability Rivali's Gale, which lets you super-jump. It makes climbing any mountain a cinch and you will barely need to worry about the rain anymore.

Just run away from Guardians for a while. I honestly miss when I still had to do that. Riding my horse through a barrage of lasers to get to the tower close to Hyrule Castle was an amazing moment in the game for me. The Master Sword straight up erases them.

You can't be 1-shot if you have shield hearts. If you're at full health but no shield hearts you can still be 1-shot. Even 1/4th of a shield heart and any attack will always leave you with 1/4 a heart.

Use ice and electric arrows in fights. Also find ways to get in the air (fire updrafts or jumping off a horse) for the slow motion bow to kick in.
For guardians just shoot them in the eye with high damage bows or find guardian weapons if you aren't confident enough with parrying. Even then you should practice parrying since it's insanely efficient.
You can always cook attack buff shit if you're running out of weapons and armor buffs or extra hearts if you are getting killed really easily as well.
Yeah same here. First thing I did off the plateau was weaving through the guardians out the front of the castle, trying so hard to avoid their line of sight. Shit was intense. It was such an awesome feeling for me when I was able to just toy with them after that.

I've put about 70 hours into the game but haven't played it in a few months. I'll finish it eventually but the whole "weapons break every 5 minutes" and the insane difficulty on certain things doesn't really make me want to come back that much.

It's funny how we all had the same experience at the start, but when it comes down to it it's all about knowing the enemy. My first encounter with a complete guardian was in the northeast labyrinth. I think you can guess how I felt when I got there expecting nothing but a regular puzzle and then there was the room below.

not him but I came to the same conclusion from my first playthrouh being a 3 heart playthrough The only guys that could 1 shot me other than a guardian(due to fire) was the big ninja guys I could combine any two foods it would heal me to full health and it felt like I never got 1 shot if I had full health maybe all my food gave me a shield heart

I never had an issue with anything being too hard, I just figured that if the enemies were too tough somewhere I probably shouldn't be there. Guardians are obviously meant to be threats you avoid until late game, there's a reason you mostly meet sentries only outside of hyrule field because they're easy to avoid.
