There aren't only 2 defense stats. There's also armor multiplier and %damage reductions (ie the most important one) And Toughness is what determines your "poise". Get it high enough and you won't flinch to most attacks. Tiers are just the letter attributes, so A(+) being the best

No but there was digital deluxe/preorder DLC armor set that was based on the Nioh statues, as well as a free gold version everyone got in an update to celebrate 1 million copies.

I actually don't know if this armor set is in the PC version or not. Someone told me it's now in the teahouse but they haven't gotten to the teahouse yet, and other people have said it's just not in the game. I asked the subreddit but the fuckers just ignored me.

Nioh's bosses are all easier than souls. The cheapness comes when they throw tons of enemies at you or two bosses so you have to cheese them back in return or run around waiting for a parry while dodging a million projectiles.

Anecdotal case in point, it didn't take me over 75 tries to kill Sif in og Dark Souls, but White Tiger in Nioh has a fucking laser beam that'll one-shot you if you're unlucky enough to get hit by it.

As far as I can recall, there are no bullshit one-hit kills in any of the Dark Souls games.
