I don’t usually notice this stuff but come one. The stormtroopers are women; the pilots are women; the admirals are women. You would think the Empire was made up predominantly of women in this game. I know they’re trying to include women more into the franchise, but does it have to be so heavy handed?

I don't know what new disney bullshit or those new cartoons may have put out but I remember reading books back before they cast aside all of that lore that a decent amount were clones and the rest were recruited. Obviously there were some women in the recruitment but they wouldn't be stormtroopers or pilots.

I don't know what you're talking about. I did notice some female stormtroopers, and they referenced Vice Admiral Rae Sloane who has existed for like 4 years. Besides that, every major Imperial character was male. The rest of Inferno Squad, Admiral Versio, Gallius Rax, even the informant spouting Imperial stats.

SW lore was always a mess. Before Disney there were MULTIPLE layers of canon. Then there is the EU which is all over the place, especially New Republic era.
Disney basically scrapped everything New Republic because it was the only way to make their own thing. But they also scrapped older era stories as well pic related

The First Order has a lot of potential, especially regarding what Timophy Zahn has been setting up in his novels. He has been setting up the threats of the Unknown Regions, and how the Empire was in contact with the Chiss, which has some exciting implications for how the First Order may have risen to power.
I do think there are some shitty stuff about the FO, but it's mostly on JJ if you ask me.
I'm perfectly happy with Rex being in episode 6, in fact I welcome it. Opens up potential for Luke to learn more about Anakin Skywalker, and the Jedi's role in the Clone Wars.

To properly answer your question though... Not many. While there is room for more survivors, Canon has been much more restrained. Shaak Ti, this time around, explicitly died. A recent comic did list Quinlan Vos as missing though, so he is probably still around. I believe Kanan will be dead before ANH though, based on Tarkin's ANH dialogue.

A much better plot (if you SERIOUSLY needed to add a rebel plot) would have been Del simply abandoning the Empire and Inferno Squad doing your own shit with the lead-up being you pump him full of blaster holes at the end of the game, with none of the "hey let's play a new hero every mission" bs
