Explosives. Especially C4. It doesn't matter which game, being able to plant an explosive and manually detonate it at just the right time is the best. Even better when you can plant several of them to set off a chain reaction of explosions. Tripwires and claymores, not so much, they're too passive and don't give the same level of satisfaction when you get somebody with them.
Grenade launchers (or even just thrown grenades, even smoke grenades are fun to play with) are also almost universally great. They get overlooked or undue hate because kids cry about "noobtubes" in their Call of Duties, but grenades and launchers more often than not require more effort and risk to get kills compared to any simple gun (especially nowadays, all of that fucking whining has devs making most grenade launchers weak as shit). Especially if I can ricochet them around corners, or aim high to get them to arc over some obstacles. The satisfaction of leading my shot to get a direct hit, or firing a grenade high into the air to have it come down many seconds later right on top of a guy, knocking it around corners to kill an enemy I can't even see, and that you usually are only carrying a couple of them so you have to make them count, explosives are very satisfying.

I know, it's even worse when you think about how flimsy the explanation is >"having to worry about running out of ammo made soldiers actually try to aim before shooting" It's a real shame because while easy to break in ME1, it was an interesting system and added to the immersion and lore of it, and then it got turned into just ammo for the streamlining of the series. I wish 2 had legacy weapons like the one rifle ME3 had in its DLC.
