I've beat the bike section quite a few times but it just gets harder.
Commandos 3 when I was 12 or so. By some miracle of trial and error I was able to beat the first mission and then the second one starts you off with nothing in a train station with enemies looking straight at you.
Also, Soldiers: Heroes of WW2 at around the same age had its fair share of fucking impossible missions like that infiltrate a German occupied city through a lighthouse with only a knife.
Nowadays there aren't really games that are too hard to beat so much as games that are not worth beating.

I can't S+ Collider for the life of me. Full chain (no more than 5s at once without a single kill) through a level with annoying, fast enemies plus tanky ones that'll surprise insta-kill you if you don't handle them immediately, and then there's a boss at the end that can steal your powerups AND your batteries. And normal enemies still spawn, and you have to chain kills/boss knockdowns the whole time or you fail the S+ condition.
Fuck Collider and fuck Liquorice.

I gave up on Ninja Gaiden on NES, decided the final boss was just too bullshit for me to care about finishing it.
the worst part of this is when you'd randomly fall through the fucking platforms. this stage is famous for its difficulty, but the later stages are way harder.

I have trouble with pretty much all fighting games. They're super cool and I want to play with my friends but I kind of get relegated to just watching them play matches that are actually a contest at all.
This is probably one of the hardest levels in the game.

I never have any issues with Volmire's Inferno. The rat on Rat Race can fall though the platforms on the top of the screen.

The rockets and fireballs (hiding at the bottom is cheating) are random though, the rat is always the same. If you can master falling unhindered between the tight left-right patterns you'll be miles ahead of the rat.

I can never save enough ammo or health for Nihilanth. That portal attack is the fucking worst unless you avoid everytime (Unlikely) or brought enough ammo to handle the enemies in each one (also unlikely).
Even if you do avoid each portal in spite of the misleading geometry of each pillar you could possibly lead it into, there's a chance it will drop spawn a vortigaunt, which become the biggest pain in the world to deal with while also avoiding Nil's projectiles.
Spacechem, though I found a guide that will allow me to 100% the achievements and forget all about it forever and ever.

All that swimming, the awkward camera control making it hard to see above the surface, sharks, the insane amount of enemies all just in range of each other.
