If i was writing a Khajiit love interest i'd start by playing up the racial aspect really, have her be a common thief, or smuggler, or just a stereotypical khajiit that you get tangled with through a quest and she just sort of sticks to you, warms up to you, and becomes less like the usual khajiit, and slowly make the player's progress in their relationship dig through the callous facade to find a different person that genuinely cares.

Technology moved forward and costs went up. Going by mods if Bethesda really wanted to officially bring back digitgrade beast races they definitely could have.

However they would have to take into account different animations, skeleton setups, different armor meshes all made more complicated by how finely tuned and detailed these can be now in comparison to a decade ago where you could get away with conveying the general idea that such and such was a leg in 6 or 10 polys. It's pricer these days and given the measure of "quality" they bless their games with it looks like Bethesda's priorities are invested elsewhere.

...you know I didn't even realize it until now but I played Oblivion as a Khajiit first. Knocking all the shit I could off tables/bookshelves was not only in character but because having physics like that applied to so many things at once was completely new to me.

At least in terms of gameplay. 50% resistance to magicka plus 50% more magicka is just fucking broken.
