Here you should wait for the losing team to say gg first. Saying gg when you just stomped them can come across as gloating. If the other team starts flaming you, apologize for the poor match and say gg anyways.

You really should say gg first, even before the game ends so as not to put the winning team in the situation described previously. It's also respectful to compliment their skill so they don't think you are bitter about losing.

It's supposed to be said by the losing team to admit defeat, then the winning team says it. If the match isn't over, the winning team shouldn't say gg until they actuall win.

if you say ggez with extremely good score you still look immature asshole because you actually enjoyed the lack of challenge but at least you don't look like a sore winner/loser

Honestly it depends on the game, typically they have their own mannerisms in the community. You can't compare Starcraft etiquette to Overwatch's for example.

I've never pissed more people off online then by typing "gg", not even purposely shitposting here or on other forums has garnered as much salt as when you wreck someone in a game and type "gg". Can't even begin to count how many times I've gotten kicked out of lobbies for that. Fighting game players have too much salt to mine boys.
Saying "gg" before the match is over is rude, particularly if there's legitimately room for a comeback. Implies that you don't respect the other team's ability at all.
