It's difficult to create human like AI that can put up with the same restrictions that the player has, so devs get around this by using gimmicks such as huge weapons that deal large amounts of damage etc

Well, it's a way to emphasize super human larger-then-life capability in a very clear way. Shouldn't be surprising. For that matter if someone really did have super human strength of course they'd use bigger weapons too, the same way well trained strong soldiers can use heavier weapons then a flabby civilian.
This too though, "good" AI is very very hard in vidya because it has to be "artificially bad". It's trivial to make the system crush any human player, but that's not generally fun. The trick is to make it the right kind of bad, providing challenge but also ability to git gud against etc. Tough needle to thread and a lot of devs just fall back to stats for challenge instead.

Tabletop miniatures and RTS units need to be identifiable. Since you're most likely going to be looking down on your units, the most visible parts for you are their helmets and shoulders. So Warhammer and Warcraft character styles with large upper bodies, big pauldrons, and huge weapons, and this style eventually into other genres of games.
That's my guess, anyways.
