They can't stop moving in the middle of a combo or animation, so you can still exploit it.
The only boss that seems to have move canceling is the Champ. He seems to come up with that kick out of nowhere.
I think champ-man just has a lot of attacks that he could potentially follow up with a kick. Also his moves generally have very short cooldowns, so it looks like he's move-canceling, but he's really just chaining them together weirdly.
Now Orphan of Kos on the other hand...
Queue up an Estus at any point during Friede's fight, she'll immediately drop what she's doing and dash towards you, even out of her invis.
They read them based one what you've queued up, not just what you're doing. If you roll late on NK and get hit, you'll roll out of the stagger and every single time this happens he'll add an attack onto his combo that's delayed just long enough to land, every single time.
Both of these things happen without fail.

Yeah, that's been a thing since DaS1. I think they even talked about it in some presentations, like how "Now the enemies fight smarter, and they will try to stop you from healing"
Most enemies do that shit, it's nothing special, and it makes healing more punishable.

DaS3 has tons of Bloodborne influence. The Corvians and the Satyrs would be right at home if you plopped them in the Forbidden Woods, and they have speed that fits BB way more than it fits DaS3. The Thralls fit that mold too; they're quick and they could easily be placed in early Yharnam & you'd think they were just street urchins.
Every enemy reads your inputs. If you just circle-strafe around Lothric knights, they'll stand there with their shields up. As soon as you press a button, they attack.

It's true, though. Everytime somebody has trouble with a DS3 enemy or boss, it's instantly because it's a "Bloodborne enemy", like that makes the slightest difference to anything at all.
And video game AI can't fucking think. If it can't analyse your inputs and test them against positional data, it can't react. Do you want to go back to the NES days where bosses did the same thing over and over until somebody dies?
There's a difference between analyzing your play style to react appropriately and reacting as soon as you press a button.
If you turtle up, the enemy should be aggressive to break your guard. If you're aggressive, the enemy should be defensive and pick their attack spots.
You should not be able to stand there with your shield up while the enemy does nothing, then attacks the instant you do an input. The enemy should not decide to trade attacks with you just because "well the player pressed a button, that means it's time to attack".

Frieda might be my least favorite boss of DS3. Mostly because it seems to sum up a lot wrong with the boss fights in DS3.
1. Too many multi-phase, multi-health bar bosses. Too many “Ha you didn’t actually kill it!”
2. Mechanics are wildly different in each phase. You have to learn the telegraphs if three different phases in order to get through
3. Very lame theme and underwhelming. The first time I fought Four Kings I was fucking blown away at how awesome it was. We’re fighting a nun in a church with a large dead dude in a chair. It’s just weird. Very few bosses felt cool.
4. Forgettable. There’s nothing memorable about this fight other than it being frustrating.
Friends gets some extra points because she’s also gimmicky. Stereo sound is pretty much required to kill her, and she is the only enemy in the entire game like that. My tv had shit speakers and it wasn’t until after I beat her that I discovered you can find her based on sound when she disappears
I still consider Crystal Sage to be the worst, but that's just my opinion, man.

Kicks generally come out fast enough to interrupt a Lothric Knight mid swing, but stance/swipe is a bit difficult to pull off fast enough.
I don't know what to tell you, man. Anytime I see a shield up I just kick or disarm and it works everytime.
With regards to estus, I can see your point, honestly, but it's basically the game telling you that the moment you chugged isn't a chug opening. You do it once, then you look for another opening because it clearly didn't work.

DS3 is a lot smoother of a game, and apart from having shields, armor, and no offensive health regen, the movements are very similar to bloodborne. Bloodborne forces you to dodge, and I mean you can run DS3 without a shield (like I did) and it will feel similar to bloodborne. The entire game will

Oh I did. I learned that you can trick Friede into dashing at you every time you Estus, and she'll drop whatever it is that she's doing to pull it off, because her AI is bad. She's like a more easily punished Fume Knight at that point.

I'm not necessarily talking about Lothric Knights, they're just the best example. I've had more than enough occasions where they just stood there with their shields down, doing nothing, but the moment I pressed a button, they reacted. I've even dropped my guard to see if they'd do anything, and more often than not, they still waited for my input. I know a lot of that can be attributed to RNG, but it seems to be a recurring trend in my playthroughs at least.
The only enemies that have been consistent have been Satyrs and Corvians, and by consistency I mean endless stamina and hyper aggression. Specifically the jumping Satyrs, anyway.

I know people seem to hate that fight in general but I loved Friede so much on my first playthough I stopped my progression and just helped people beat her for like 10-12 hours of game time.
so you can equip the basic dagger and cheese her with FP regen and Quick Step.
You just run to the other end of the area and use any item, it's not just estus. 9/10 times she won't close the distance, and you get a free weapon buff, sippy, and/or you can beat the shit out of her.
It is, but that doesn't mean DaS3 is better.
Multi-health bar is not as prevalent, but I'm struggling to think of a boss that doesn't have at least two phases.

Champ's phase 2 starts at ~70%. He twirls his halberd and his eyes start glowing, after that he gains a charging attack and a 360 degree sweep.

It kinda makes an enormous difference. Some genuinely glaring design flaws arise from this happening.

Maybe after you die to him, but when you first get to him he's bent over. Either way he does a pretty clear animation where he twirls his halberd when he enters phase 2, and will become far more aggressive immediately after.
The DLC was trash but Friede was the one of the best DLC bosses. Far surpassing Gael.

Nothing will make you hate hosts as much as DS3. I now believe all people who summon deserve two to three red phantoms all at once. Also reds need to be able to attack through one another.
NK is the fight I thought this was most noticeable on - to the point where it began to feel really unfair. I ran with an UGS the first time I fought him, and after about 100 attempts, I had to switch to a SS before finally beating him. I've never felt like such a cheater in my life, and I'm not proud of it, but that fag knew when I was about to swing and would animation cancel into a wombo combo.
Friede and Soul of Cinder are very noticeable too, but not as punishing as NK who can end you in one combo.
